Slow Cooker

Meatloaf


2 pounds ground meat – beef, pork, chicken, turkey, veal or combination*
1 medium onion, finely chopped
½ cup finely chopped carrots
2 large eggs
2 tablespoons Worcestershire Sauce
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon yellow mustard
½ cup grated Parmesan cheese
¾ cup ketchup or barbeque sauce
Topping
½ cup ketchup or barbeque sauce
1 tablespoon yellow mustard

In large bowl, mix together meat, onion, carrots, eggs, Worcestershire sauce, salt pepper, mustard, Parmesan cheese and ketchup or barbeque sauce.  Combine until all ingredients are mixed well.

Shape into loaf or round that is slightly smaller than the slow cooker.  Shape this on a large piece of aluminum foil.  The foil should be large enough to allow you to pull the meatloaf out of the slow cooker when it is finished.  Place in slow cooker.

Mix ketchup or barbeque sauce and mustard together, spread on top of meatloaf.

Cover and cook on low for 8 to 10 hours.

*Using lower fat meat may result in a drier meatloaf.  You may want to add some oil if using turkey, chicken or very lean meat.
